My Best Banana Bread

My sister sent me this recipe over a year ago on the back of a postcard and I am just now trying it for the first time. The recipe title is the title of this post. Let me just say that her best banana bread is now my best banana bread. :D






The recipe: (Makes 3 loaves)
  • 2 cups sucanat or sugar

  • 2 sticks (1 cup) butter softened

  • 5-6 very ripe bananas (I mash and freeze mine until I am ready to use them)

  • 6 eggs separated - beat in yolks - beat the whites stiff to fold in last

  • 1 cup sour milk (add 2 tsp. vinegar and let set for 15 minutes)

  • 4 cups unbleached white or whole wheat flour (or 1/2 and 1/2)

  • 1 tsp. salt

  • 2 tsp. baking soda

  • 2 tsp. vanilla

  • chocolate chips, optional (I added this ingredient) =)

  1. Mix sucanat/sugar and butter in bowl or mixer.

  2. Beat in egg yolks.

  3. Add sour milk, mashed bananas and vanilla.

  4. Add flour, salt and soda.

  5. Fold in egg whites.






Folding in the egg white last.
Top with milk chocolate or semi-sweet chocolate chips if you love chocolate like me and bake 300 degrees for 1 hour or until golden brown.




Very good! We ate a loaf in no time at all and I let the other 2 cool, sliced it, and then froze it for a road trip coming up. =)

    Without a doubt this banana bread was amazing. I loved the moistness of it and the taste. It was a welcome treat during the long trek to Idaho, but it was well worth it! The only complaint I have is the usual- please make more!
