My boys had a lesson on carotene this week ~ you know, the stuff that makes a carrot orange.
In it's natural state, Organic Virgin Palm Oil is also red in color due to a high concentration of carotenes and tocols (vitamin E).
In fact,
"Virgin Palm Oil is one of the richest natural plant sources of carotenoids with concentration of 500–700 ppm. It has 15 times more carotenoids than carrots and 300 times more than tomatoes. No other vegetable oil contains carotenoids in such significant quantities."Carotene is what our bodies use to make Vitamin K.
Stable at high temperatures, Virgin Palm Oil can be used for frying. So, we used it to make Sweet Potato Fries. It just seemed right since sweet potatoes are orange, too. And they need a fat to bring out their nutritional value.
But, I wasn't so sure after the oil heated up. It has a very strong smell. Knowing how good it is for you, and how popular it is around the rest of the world, I pressed on.
So glad I did.
The fries were very good. I seasoned them with sea salt, pepper and crushed rosemary. The dark golden brown ones were the best. The potatoes are naturally sweet, so they had a caramelized flavor to them, yet the spices gave it a savory taste.
So, while Tropical Traditions Organic Virgin Palm Oil has a strong flavor/smell, it didn't affect the the taste and I won't be so nervous to try it again!
