Counting My Blessings

“When upon life’s billow you are tempest tossed,
When you are discouraged thinking all is lost;
Count your many blessings, name them one by one,
And it will surprise you what the Lord hath done!”

We read this song in a book that we read for school today. It was a good reminder for me to count my blessings! On Monday, I started a clean cycle on our new oven and 20 minutes into the cycle we noticed that the glass inside the door was shattered and today I was told that it would be almost a month before it could be fixed. I can't image going a month without an oven when we rely on baking to feed our family. As I shopped for groceries this morning, I thought of all the things I could make IF I had an oven. Well, I need to count my blessings! There are many things I can make on the stove. Jordan makes a really yummy Skillet Pocket, as I call them. (You don't want to know what he calls them!). They are like a pizza pocket and they are cooked on a cast iron skillet. We can make English Muffins on the cast iron skillet, too, and we haven't had those in a long time. I am thankful that I can still use the stove top and I am reminded of what it was like living in Earl, having a teeny tiny cooking space! I have hot running water, a counter to work on, a large fridge, and a big table to sit at! I am thankful for a freezer full of deer meat and grass-fed beef that was given to us! I am thankful for His bountiful provisions when I know so many families are going through hard times right now. I am thankful for a warm house to cook in - it is cold out there! I am thankful for a family that enjoys my cooking - most of the time! (I'm not so sure they enjoyed the millet mush I made this morning - it is still sitting in the pan on the stove!) And I am thankful for a husband who helps me clean up when a tornado has hit our kitchen! And, I have much more to be thankful for beyond the kitchen. Thank you, Father, for the many blessing you have blessed us with! I am going to go count some more blessings, and name them one by one.
