Brain Nourishing Fats: Double the Yolk Egg Nog



 Brain nourishing fats are helping my child overcome childhood apraxia of speech.


I've been giving Bo an Omega 3 supplement since this past summer, but after reading Is Your Child's Brain Starving?, Piper's story really inspired me to radically modify Bo's diet to include more healthy brain nourishing fats.

I am committed to increasing Bo's intake of healthy brain nourishing fats by making sure he gets plenty of the following:

  • Fermented Cod Liver Oil/Butter Oil Blend

  • High Vitamin Butter Oil

  • pastured eggs

  • organic whole milk

  • organic creams

  • whole milk yogurts and cheeses

  • pastured butter

  • coconut and olive oils

My favorite way to get most of those brain nourishing fats into my little one is with this easy to make egg nog.  It's my favorite because it's my little one's favorite!

I use an all natural egg nog recipe from Revived Kitchen that uses honey instead of sugar and real food ingredients.

My recipe uses ingredients that are easily accessible to me: whole organic milk, non-homogonized low pasteurized cream or organic whipping cream, and of course pastured eggs.*

And I double the egg yolks to get more healthy fats into Bo!

*For safety, please do not use store bought eggs for raw eggnog.

To make the egg nog, I use:

  • 2 cups milk

  • 2 cups cream

  • 16 small egg yolks or 12 large egg yolks from pastured chickens (save the whites!)

  • 1 1/2 T pure vanilla extract

  • 1 1/2 t. ground cinnamon

  • 1/8 t. ground cloves

  • 1 t. ground nutmeg, plus some for sprinkling

  • 6 T honey

I don't like my egg nog foamy, so I add the egg yolk to my Vitamix with 1 cup of milk , vanilla, and spices. I blend on medium for about 30 seconds, flip to high for about 5 seconds. Then I add remaining cup of milk and 2 cups of cream and blend on low for 10 seconds to mix.

Then I add 1 t. of Green Pasture's Cinnamon Tingle Fermented Cod Liver Oil/High Vitamin Butter Oil blend per cup of egg nog. This is of course optional for optimal nutrition - a must for Bo!

Then, on occasion, I top with homemade whipped cream and sprinkle with ground nutmeg to make it special.

The first time I added the fermented cod liver oil/butter oil blend, I set it on the table for Bo and it was half gone before I could get a photo!



And wow, am I impressed with the results!

Bo is adding so many new words daily. I can't keep up with documenting each word anymore. He's said more words in the past 2-3 weeks than he has all year and is starting to use 3 word sentences. A delicious success!

Ingredients

  • 2 cups milk

  • 2 cups cream

  • Optional: 6 t Cinnamon Tingle Fermented Cod Liver Oil/High Vitamin Butter Oil Blend

Instructions

  1. Add egg yolk to vitamix or blender with 1 cup of milk , vanilla, and spices.

  2. Blend on medium for about 30 seconds, flip to high for about 5 seconds.

  3. Add remaining cup of milk and 2 cups of cream and blend on low for 10 seconds.

  4. Served topped with homemade whipped cream and sprinkle with a smidgen of nutmeg!

  5. Optional for Optimal Nutrition: Add 1 t. of Green Pasture's Cinnamon Tingle Fermented Cod Liver Oil/High Vitamin Butter Oil blend to each cup.

P.S. I save the egg whites to make chocolate angel food cake and top it with real whipped cream!
